Sometimes we have to eat a little healthier. I have had to, in order to drop some weight and better control my blood sugar. I am a firm believer that shouldn't affect how delicious my food is, and strive to enjoy full, rich flavors without sacrificing any health benefits. This recipe meets that standard. I found it looking for something that used cabbage and loved the fact that it is both low carb and, if made with low fat cheese, not crazy high in calories. My husband liked it, too, which is a bonus for finding healthy recipes we both enjoy!
Ingredients: olive oil, green cabbage, sweet onion, garlic cloves, salt, pepper, cooked chicken breast, low fat small curd cottage cheese or cream cheese, sour cream, dried parsley, plus more for topping, reduced fat cheddar cheese, large eggs, Parmesan cheese
Step 1: Preheat oven to 375. In a large, deep skillet, heat the olive oil over medium heat. add the cabbage and onion and cook until starting to soften but before it begins to turn brown. Step 2: Add the garlic and cook for one minute more. Season with salt and pepper. Remove from heat. Step 3: Stir in the chicken breast, cottage/cream cheese, sour cream, and parsley. (I had substituted cream cheese, as I don't like cottage cheese. Tasted great!) Add the cheddar cheese and beaten eggs and mix until combined. Step 4: Spread mixture into a glass pie-plate. Top with Parmesan cheese and more parsley if desired. Bake for 25-30 minutes or until starting to brown.

4 cups green cabbage, shredded or cut into thin strips
1 small sweet onion, finely chopped
3 garlic cloves, minced
Salt and pepper
2 cups cooked chicken breast, shredded or cut into small pieces
1 cup low fat small curd cottage cheese or cream cheese
½ cup sour cream
2 tsp dried parsley, plus more for topping
½ cup reduced fat cheddar cheese, shredded
3 large eggs, beaten
½ cup Parmesan cheese
