I have had a strong urge to bake recently. I couldn't last weekend because we didn't have any eggs. I remedied that during a quick stop at the store this week, and looked up things to make. I didn't want any of my usual go-to's, so I just started Googling cake recipes. I landed on making a spice cake, which I had never made from scratch before. Since I was going to use my bundt pan, I decided to make an icing I could pour over it. Once again, back to Google. I had to make a couple of modifications, but it turned out great. My husband and son gave it rave reviews.
Spice Cake Ingredients: flour, cornstarch, baking powder, salt, milk, eggs, cinnamon, allspice, ginger, cloves, nutmeg, vanilla, butter, brown sugar
(Note: I took this from AllRecipes.com but made a few modifications in the process based on comments within the site. You could certainly follow the steps as written, but they are a bit different from traditional cake making.) Step 1: Adjust oven rack to middle position and preheat oven to 350 degrees. Step 2: Grease and lightly flour a 9-by-13-inch pan or bundt pan. Step 3: Whisk dry ingredients and spices in a large bowl. Step 4: Beat eggs, butter, and sugar in large mixing bowl. Step 5: Add milk and vanilla. Step 6: Combine about 1/3 of the milk mixture with the flour mixture and beat on low until smooth. Step 7: Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Step 8: Pour batter into cake pan and bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Step 9: Let cool before removing from pan and icing.
Icing Ingredients: milk, butter, brown sugar, powdered sugar, vanilla
Step 1: In a small saucepan over medium heat, add milk, butter and brown sugar. Whisk together and bring to a boil. Step 2: Remove from heat and whisk in powdered sugar and vanilla. Step 3: Drizzle over cake immediately. (Icing will thicken as it cools.) CONFESSION TIME: I ran out of brown sugar. I tried to modify with a little molasses with regular sugar. I didn't get the caramel flavor or color I was looking for. But it still tasted great, so I would recommend based on that fact alone. This came from a fun site called MelanieMakes.com.
