Nothing says springtime in the South like strawberries! My son and I love strawberries, any way they can be served. Thanks to this affinity for the yummy red fruit, I decided to look for a recipe that used strawberries, particularly one that would be perfect for a potluck. I came upon this recipe for strawberry yum yum while actually searching for strawberry pretzel salad. I have had cherry yum yum before, but can’t recall ever having strawberry. Thus, I decided to try it out. It was a creamy and sweet way to enjoy strawberries - my son and I thoroughly enjoyed it! I found this on www.notjustsundaydinner.com. (I made one modification - I could not find the Dream Whip envelopes, so I subsituted prepared dream whip. Still tasted great!)
Ingredients: unsalted butter, graham cracker crumbs, cream cheese, Dream Whip, fresh strawberries, cornstarch, sugar, strawberry Jello, water
Step One: Combine cornstarch, Jello, sugar, and water in a saucepan. Cook over low heat, stirring with a whisk, until mixture thickens. Remove from heat and cool. When the glaze has cooled, add strawberries. (I must confess, I rushed the process and had a more watery glaze than I wanted. However, it was still very tasty, so no harm done!) Step Two: Melt butter and mix with graham cracker crumbs. Sprinkle half of the crumbs in the bottom of a 9 x 13-inch dish, set aside. Step Three: Cream sugar and cream cheese together. Step Four: In a separate bowl beat Dream Whip as directed on package. Step Five: Mix cream cheese mixture with the Dream Whip until smooth. Step Six: Drop spoonfuls of cream cheese mixture on the top of crumbs. Spread carefully, careful not to disturb crumbs. Step Seven: Top with strawberry glaze. Step Eight: Add the remaining cream cheese mixture and spread carefully to cover strawberries. Step Nine: Sprinkle on the remaining graham cracker crumb mixture.

Recipe:
¾ c. unsalted butter

8-oz. pkg. cream cheese
2 envelopes Dream Whip (equivalent to approximately 4 cups prepared)
1 qt. fresh strawberries, washed, and sliced
3 tbsp. cornstarch
1 c. sugar
3 tbsp. strawberry Jello
1 c. warm water
Combine cornstarch, Jello, sugar, and water in a saucepan. Cook over low heat, stirring with a whisk, until mixture thickens. Remove from heat and cool. When the glaze has cooled, add strawberries.
